Macondo NYC: Eatings Consciously

I thought I only liked Latin food in the summer when the sun's beating down and I can order a margarita on the rocks to cool me off. I was strongly mistaken. Even in this frigged 20 degree weather there's still nothing quite like chunky guacamole and the smell of fresh squeezed lime. Maybe it's because when the flurries fall, we want to be taken to our summer oasis, an umbrella in cup and that cup in my hand. This weekend I went to brunch at Macondo NYC right in my neighborhood on East Houston right in the Lower East side.

Although small, it's perfectly decorated, extremely packed, and boisterous and rowdy! Best of all, they have an unlimited Mimosa brunch where you get to pick from three different deliciously flavored Mimosa - Blueberry Basil being one of them!

This time I didn't partake in the rambunctiousness (rookie move), but I did enjoy one hell of a meal! Eyeing the menu there are beautiful healthy options - many poached egg recipes, quinoa salads, and small plates. But one in particular held my attention. A bed of grilled corn in a delicious paprika marinate topped with a beautiful poached egg and garnished with basil, cilantro, jalapeno peppers, and Parmesan cheese.
Of course, I had to keep in mind how much corn was in my bowl. Although a vegetable, it's high in sugar. I had a hard time leaving half on my plate, but I did. The dish is served with a single egg so it was the perfect meal - light with so much flavor!

Cannot wait to interpret the dish at home!
